The grape
gathering compain of Wine plant “Asenovgrad” starts during
the first days of September with the early ripening grape
sort Rubin which is a cross-fertilized/hybrid/ between
the French sort of “syra” and Italian sort of “nebiolo”.
Furthermore continueing with delivering and processing
of such sorts like Cabernet, Merlot and finallized at
the end of October with sort of mavrud type.
The techonology of processing and production of red wines
of the limited company is a combination of the latest
achievements of contemprary wine sience and accumulated
through the years by espertise of the specialists working
in the Vinery/ Wine Plant.
The investment of 6 mln leva through the Sapard program
during the 2003-2004 gave the possibility for the wine
cellar to be equipped accordingly with the newest machines
and inventory for delivery, processing, fermentation of
raw grape and furthermore fixing and innovation with modern
equipment for wine bottling.

The basic
issues within the production technology of wine production
are as follows:
- grape defining and gathering in the period of technological
ripeness
- clusters’ separation and grape squashing
- grape fermentation in the vertical and hourizontal wine-fixer
made of “inox” – the last gives the very good opportunity
for temperature regulation as well as monitoring of wine
itself
- separation of wine under the defined weight /volume
which is done under the estimation of wine expert/technologist
- special fermentation of monovarnish character and unlees
processes
-maturing of one part of the wine in oak barrels of Barric
type – 220 l, Bulgarians, French and Americans, from 10
to 18 months
- preparation, processing, stabilization and bottling
of wine,
- during the whole process the wine motion and its bottling
is done under the nitrogen existancy
- Maturing of the highest quality wines, of bottled boutique
type in the period of time between 6 to 12 months before
their exposure onto the market
The wines of Wine Plant Asenovgrad
has got a very good consumer awareness and attitidue not
only in Bulgaria but outside country and almost all over
the world.
The most famous ones are
the brands of red wines where boutique ones are “Mamut”,
“Antanta”, “Tsaritsa”, “Asena”, “Mavrud” and “Cabernet
special collection”, series of “Tsar Asen” selection-
“Mavrud”, “Rubin”, “Merlo”, “Cabernet”, reserves – “Mavrud”,
“Cabernet”, “Monastry whispering”, “Stanimashka Malaga”.
